Honey Cake

  •  2 ¾ cups of sifted flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • 3 eggs
  • 1 cup of strong coffee, cooled
  • 1 cup sugar
  • 2 Tbs. oil
  • 1 cup honey
  • 1 shot of whiskey
  • ½ cup candied orange rinds
  • ½ cup chopped walnuts
  • ¼ tsp. salt

 

  1. In a large mixing bowl, blend eggs and sugar
  2. Add coffee, oil and honey
  3. Mix well
  4. Add salt
  5. Slowly add sifted flour, baking powder and baking soda
  6. Mix until smooth
  7. With spoon, mix in walnuts, orange rinds, and whiskey
  8. Pour into a greased, wax lined 13x9x2 inch pan
  9. Bake at 350 degrees in oven for approximately 40 minutes
