John’s Cranberry Oatmeal Cookies

  • 1 ½ cup unsalted margarine
  • 1 ¾ cup light brown sugar
  • 2 large eggs
  • 1 ½ Tablespoon honey
  • 2 teaspoon vanilla
  • ½ teaspoon salt
  • 2 cups flour
  • 1 box (18 oz) old fashioned oats
  • 12 oz fresh cranberries, coarsely chopped
  • ½ cup golden raisins
  • Finely chopped zest of 1 orange
  1. Preheat oven to 350.
  2. Cream margarine and sugar.
  3. Add eggs, honey, vanilla, salt and beat until smooth and creamy.
  4. Work in flour and oats (hands) until combined.
  5. Add cranberries, raisins, zest and mix.
  6. Make cookies
  7. Cook 15 – 20 minutes.
